Comme mesurer le profit opérationnel d'un restaurant avant loyer, impôts et usure équipement.

## Formule

```
Marge EBITDA = EBITDA ÷ CA × 100
```

- **EBITDA**: Résultat avant intérêts, impôts, D&A
- **Chiffre d'Affaires**: Ventes totales
